## ITINERARY

### On the way

We will drive a short distance from the city of Rethymno to the village of Loutra: a picturesque village located among olive groves. Loutra is characterized by its narrow cobbled streets, bougavilla plants and Venetian buildings. We will have the opportunity to see the fabrika (old oil mill), the medieval fountain, as well as the house of Ilias Spantidakis( aka Luis Tikas, a person of significance to US social history, born and raised in Loutra).

### It's cooking time!

Androniki, our instructor, will welcome us to her magnificent house in the heights of the village with a breathtaking view of the city. Our charming host will accompany us throughout the cooking class, where we will share her passion for Cretan culture and gastronomy. Put on your apron and prepare to be impressed by the quality of organic and natural products; we will use products from her own garden; olive oil, many fruits, vegetables, plants, herbs... Starting the cooking we will learn how to make delicious ‘tirozouli’ (homemade Cretan cheese), ‘dakos’ or ‘koukouvagia’, tasty ‘kremidokalitsouna’ (flour, dry onions and olive oil), ‘youvarlakia’ avgolemono (meatball soup with sauce egg-lemon), or ‘chaniotiko Boureki’ (vegetarian dish).Put on your apron and be impressed by the quality of organic and natural products; we will use products, which come from their garden; olive oil, many fruits, vegetables, plants, herbs... ## ITINERARY

### Get into Cretan mentality

We start at a beautiful "kafeneio” hidden in the heart of the city, in a small and peaceful square with a running fountain and orange trees. There, we will enjoy an authentic Cretan breakfast, which consists of a traditional Greek coffee or fresh juice and a handmade cheese pie (Greeks call it "sfakianopita") covered with handmade jam. As we all enjoy our Cretan breakfast in the calm atmosphere of this quiet café we will start discussing the main points of our visit, the historical sites, the traditions and customs, and how all these are connected to Cretan Gastronomy.

### Honey, olive oil and raki tasting

The whole Cretan diet is based on these three ingredients. Distinguishing high and low quality, learning all the dos and don’ts about them, as well all the secrets of their production is the key to success! This is all we will do, along with a lot of tasting, in a comfortable and specially designed tasting room.

### The “phyllo” workshop

A 17th century Venetian mansion houses “Yorgos Hatziparaschos” phyllo workshop, the oldest of its kind. He is famous for making phyllo by hand for more than 63 years now. The phyllo pastry is the base of the famous traditional Greek desserts kantaifi and baklava. While the ingredients are simple - flour, water and some salt - the proportions according to Mr. Hatziparaschos took years of testing. Sprinkled with the right balance of cinnamon and chopped walnuts, kantaifi is one of the favorite sweets of Greeks. There is no way to describe the taste of a masterfully made baklava or kantaifi, you just have to discover for yourself.

### Cretan feast

A restaurant hidden in an Ottoman time inner garden will be our last stop. There, under the lemon trees, you will taste the Cretan cuisine in its modern form. Traditional dishes, cooked with fresh local ingredients and served in a stylish, modern way reflect the connection of the past and the present of Cretan life. ### Explore the world of Cretan Olive oil

Kanakis modern Olive oil factory and its experts will welcome us and share their knowledge concerning olive oil production process. Upon arrival we’ll meet an ancient olive tree, standing there for over hundreds of years, gifting generously its olives to locals and visitors. After a few steps, we are inside the facility, where the innovative olive mill will be waiting for us; but, no need to rush! Let's enjoy a traditional Greek coffee or some fresh juice first. The calm and quiet atmosphere of this little coffee corner inside the facility is just ideal to relax and take a moment before we start our informative tour. The experts will walk us step by step through the production process. Of course after that, they won’t let us leave without offering us a taste of their exquisite virgin olive oil! At first we will taste it with no additives, to be able to enjoy its smell, taste and texture in its purest form. Right after that, it will be served to us the way ancient Cretans preferred it; infused with salt and lemon. At the end they will let us know the secrets on storage, best use and healthy attributes of the olive oil.

### Taste unique Cretan Wine varieties

After a 10' drive we will reach one of the best wineries of the region, to learn - and taste – everything concerning the Cretan wine. There, we will enjoy a 30-40' tour, during which we will learn about the history, tradition, the latest developments in the production of wine and of course all information on the particular characteristics of the Cretan “terroir”. We will participate in a fully guided tour of the cellar, with the strong smell of wooden barrels and maturing wine. After the tour, we will continue to the wine tasting room, where we'll be able to taste five types of Cretan wine and train our palates on the delicious wine paths! Try assyrtiko, vidiano, malvazia and other varieties amongst the best of Crete. Of course, mezedes like traditional paximadia and olives couldn’t be missing from this tasting journey.

### Time for lunch!

Finally we will visit either the small and beautiful village of Nipos or Vryses, depending on the weather and the day, in order to end our tour on a tasteful note. In Nipos, we will enjoy all the amazing plates in the menu with a side dish of a spectacular mountain view thanks to the position of the taverna. ## Description

If you are greatly fond of ladles, pots, frying pans and of course traditional Greek cuisine or pastry, get ready for your ultimate experience: lessons by our chef, ‘a woman with the magical hands’, as we call her. Mrs Irini has experience, ability and most of all love for cooking.

Stuffed tomatoes and peppers (gemista), goatmeat and potatoes cooked in casserole (patatato), baked pasta (Greek pastitsio), Greek zucchini pie (kolokithopita), Greek custard pie (Galaktoboureko), Greek kataifi rolls and the list goes on…

We don’t know whether cooking with the ‘magician’ Mrs Irini or tasting delicious recipes with fresh ingredients is the best part of the lesson. One thing is for sure: you are going to experience both.
